escarole salad

Got a bit overrun with the winter greens I planted this spring. They were the first thing planted –maybe in March! Now they’re nice heads of lettuce ready to go. There’s escarole, radicchio and curly endive (frisee). The head fits perfectly in the salad spinner, and serves four. It’s good stuff! Real good.

Mostly I’ve been using a sherry dressing for it. Plain and simple. And so good!

Escarole Salad
1 small head of escarole

2 tsp sherry vinegar
2 tbsp olive oil
1 pinch of sugar
salt and pepper
garlic (one clove) optional

Give an extra grind of pepper to the bowl. Toss well. If the greens aren’t totally dry that’s great. Just spin as best you can.
