Ok second time is a charm. Tonight made saag paneer. And the paneer turned out fantastic, way better than last time. I used a new recipe. Here it is:

2 litres whole milk
4 cups buttermilk

Bring milk to a boil in large pot. Line strainer with 2 layers of cheesecloth. While simmering add in the buttermilk. Stir. It’ll separate. Stir for 30 seconds to one minute until it’s finished separating. Then pour mixture into the cheesecloth. Twist the cheesecloth around to make a ball. Put something heavy on top. When it’s cooler put in the fridge. For an hour at least. Slice and use in saag paneer. Yum. Really great!
