how to make guacamole when you have one avocado

It is possible, and it is good! Best pal turned me onto this concept years ago. Added bonus it is also healthier than regular guacamole. Kid and doode tested and approved. Try it!

  • 1  cup  frozen peas slightly thawed or thawed
  • 1  large ripe avocado, peeled and seeded
  • 1/3  cup  minced green onions
  • 1/4  cup  bottled salsa
  • 1 1/2  tablespoons  fresh lime juice
  • 3 good shakes hot sauce or more
  • 1/2  teaspoon  ground cumin
  • handful of cilantro chopped
  • 2  garlic cloves, minced
  • salt to taste

  • Mash peas well and stir in other ingredients. Blend with hand blender to really disguise peas. Best if you add some ingredients later to keep some chunkiness. Yum.
