Mango chutney cheese ball with cashews.
2 cups grated cheddar
1/2 cup cottage cheese
1 tbsp orange juice
1 tsp curry powder
1/4 tsp garlic
1/4 tsp cayenne
1/4 cup shallots or green onions
1/4 cup mango chutney
1 cup salted cashews chopped fine
1 tsp fresh corainder or parsley
Chop nuts in food processor bowl set aside. Then shred cheese in another food processor bowl. add cottage cheese, oj curry garlic and cayenne, whirl away. add in green onions and chutney. mix in.
put piece of plastic wrap on counter. put half cashews on it. spread out a bit. dollop 1/2 cheese mixture on top. fold up plastic wrap (this gets the cashews up around the sides. and put a few more cashews on the top. twist up the plastic wrap and flip over on plate and refrigerate. repeat with with other half. keeps for up to 2 or 3 days. sprinkle with parsley or coriander to serve. good with triscuits! hide from the doode!
